Chewy Apple and Carrot Dog Cookies
INGREDIENTS
1 cup grated carrot (raw)
3/4 cup unsweetened applesauce
2.5 cups oat flour
1 egg
2 tablespoons coconut oil (melted)
1 teaspoon cinnamon (optional)
DIRECTIONS
Preheat your oven to 350°F (175°C).
In a large bowl, combine the grated carrot, applesauce, egg, and melted coconut oil. Stir until smooth.
Gradually mix in the oat flour and optional cinnamon until it comes together
Shape the cookies. You can either drop a spoon of the mixture onto a baking sheet and flatten down with the back of a spoon to cook, or add a little extra flour and roll out the dough on a lightly floured surface to about ¼-inch thickness. Use cookie cutters or slice into desired shapes.
Place cookies on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden and firm.
Let the cookies cool completely before serving.
Store in an airtight container at room temperature for up to 3 days, in the refrigerator for 2 weeks, or freeze for up to 3 months.
